Yelkin® TS lecithin is a surface-active agent derived from soybeans. It functions as an emulsifier, wetting and dispersing agent, and release agent in various food applications. It is used in margarine, milk replacers, frostings, chocolate, baked goods, and more. It improves machinability, volume, and shelf life in baked products and enhances viscosity and dispersion in other food systems.
