Elderberry is a shrub widely grown in Europe, North Africa, central Asia, its medicinal parts are, leaves, fruit, flowers, now generally refers to the fruit of elderberry. The main components of elderberries are polyphenols, including anthocyanins and flavonoids.
Anthocyanins are the main cause of the attractive red, purple and violet colors of elderberries and other fruits and vegetables, as well as a natural pigment widely found in nature. Elderberries also contain vitamins, minerals, amino acids and sterols. Identifiable substances include the following vitamins A, C and iron.
