Jungbunzlauer trisodium citrate dihydrate is a salt of citric acid. Jungbunzlauer citric acid is produced by a submerged fermentation process which employs a strain of the micro-organism Aspergillus nigerto convert sugar into citric acid. The salt of citric acid is obtained by neutralization with a sodium source. This leaflet describes the manufacturing process currently operated by Jungbunzlauer.
