Sorbitol has the chemical property of polyhydric alcohols. It can be oxidized, lipideds and dehydrated. It is both acid and heat resistant and will not cause Maillard reaction with amino acids and protein. The γ-crystal sorbitol is blessed with stability, high melting point, and resistance to moisture absorption together with characteristics of tablets able to be directly pressed.
It is a sugar substitute with approximately 60% the sweetness of sucrose and is used as a nutritive sweetener. It is often used in diet foods (including diet drinks and ice cream), mints, cough syrups, and sugar-free chewing gum, as well as in modern cosmetics as a humectant and thickener.
