Sunflower seed protein powder is obtained from the kernels of Helianthus annuus L. by expression and milling, with a protein content of typical 50%. Sunflower seed protein has good water absorption, oil absorption, and emulsification. Its oil absorption is higher than that of soybean protein. Sunflower seed protein concentrate and protein isolate have foaming and stirring ability similar to fresh egg white. It has rich nutritional value and is recognized as a good health food. Good additives for general food, baby food, and meat products to make artificial milk and other beverages.
