L-Malic acid,also known as L-Hydroxysuccinic acid.Appearance for white crystals or crystalline powder,has a strong hygroscopicity,soluble in water,ethanol,has a special sour taste. L-malic acid is an important component of natural fruit juice. Compared with citric acid, it has a greater acidity and 20% stronger acidity than citric acid, it has a special fragrance, and does not damage the mouth and teeth. Metabolically beneficial for amino acid absorption without fat accumulation, it is a new generation of food sour agent.It is generally believed that L-malic acid has important physiological functions, but half of the D-type in DL-malic acid is physiologically ineffective.
