Madagascar is strictly regulated by the government, so only fully mature Vanilla Beans are picked. Metals and toxins that pollute the topsoil of other countries are rarely found in the soil of Madagascar. Madagascar Cinnamon (Cinnamomum Zeylanicum) is sweeter than the commonly used cinnamon (Cassia), is a light tan color and has a smooth bark surface.
